普通小麦(cmmon wheat)  普通小麦(cmmon wheat) 是小麦属的六倍体种之一,学名Triticum aestivum L.或T.vulgare Host,又称软粒小麦(soft wheat)或面包小麦(bread wheat)。染色体数2n=6x=42,染色体组型为AABBDD。种植面积约占小麦总面积的90%,是全世界最主要的粮食作物,可制面包、馒头、面条、糕点等多种食品。 普通小麦起源于西亚,分布于世界各地,在中国的栽培历史约4000年。各省(自治区)、市都有分布。类型丰富,共有321个变种。中国有变种120余个,主要有var.erythrospermum(长芒、颖无毛、白颖壳、红粒),var.ferugineum(长芒、颖无毛、红颖壳、红粒),var.lutescens(无芒、颖无毛、红颖壳、红粒),var.graecum(长芒、颖无毛、白颖壳、白粒)等。 植株高度多在80-120cm之间,一般为100cm左右,茎秆多中空。植株叶片数大体上春性品种7-12片,冬性品种12-16片;春性品种较宽,冬性品种较狭。一般冬性品种分蘖较多,春性品种分蘖较少。穗轴不易折断,穗正面宽于侧面,有纺锤形、长方形、棍棒形、椭圆形及分枝型等类型。穗长5-15cm,穗密度D=15-30,小穗多花多实。芒有长芒、短芒、顶芒、无芒、曲芒等;颖色有红、白和黑,护颖的形状分圆、椭圆、卵圆、披针形等,颖嘴分钝、锐和鸟嘴等形状,颖肩,分无肩、斜肩、方肩、丘肩等,籽粒从深红、红、浅红、黄到白色分成一系列的颜色;地方品种千粒重20多克,改良品种一般30-40g,种子休眠期一般白皮品种较短,红皮品种则较长。 分秋播和春播两大类型。一般幼苗匍匐、颜色深绿的品种多属冬性,抗寒力较强;幼苗直立,颜色浅绿的品种,多属于春性,抗寒力弱; 中国春麦区生育期一般为100天左右,冬麦区一般为200-250天。东北春小麦生育期短的只有80-85天,华南冬小麦少者不超过120天,青藏高原地区的冬小麦,最长可达300天以上。秋播小麦自8月直到12月播种,次年3月初到6月下旬收获,春播小麦3月或4月间播种,7月至9月收获。对冬季寒冷和春霜的冻害有一定抵抗性,抗寒力强的冬性品种可耐-20℃左右的低温;随着矮化育种的发展,品种的耐肥性逐步提高,产量可以达7000kg/ha而不致倒伏,有的甚至每公顷产量可达1万kg以上。能抵抗黑穗病、锈病、白粉病、病毒病以及耐赤霉病。长江以南的品种籽粒质地以软质较多,黄河以北的品种以硬质、半硬质较多;蛋白质含量在10-16%之间。
